I’ve got a shelf full of cookbooks, but I rarely use them. I love to cook but planning meals ahead of time is not a strong suit. Instead I tend to buy certain staples, including spinach, garlic, green onions, feta, chicken, diced tomatoes, and if I’m splurging, bacon. Tonight I had no idea what to make for dinner so I grabbed all of the above. When the first bite elicited a “WOW” I figured I better write down what I did so I wouldn’t forget it.
One chicken breast
- KC Masterpiece Garlic Balsamic marinade
- 1/2 box ziti pasta, cooked
- 2 strips bacon, chopped
- 2 large cloves garlic, diced
- 1/2 bag fresh spinach
- 2 green onions, chopped
- 1/2 can diced tomatoes, drained
- 4 oz feta cheese crumbles
Cook the chicken breast in the marinade in one skillet. Cut into bite-sized pieces when cooked through. In another skillet cook the bacon until semi-crispy. Remove bacon from pan and add garlic and spinach and sauté until spinach is wilted. Add chicken, green onions, cooked bacon, diced tomatoes and feta cheese to pan and heat through. Toss with pasta and wait for “WOW”.
